I made these Friday night, and a few times since then. (1 recipe makes a lot!) The cake batter cooked just fine in a waffle iron. The only thing that was kind of different from what I’d expected was that they don’t come out crispy like regular waffles; they’re just soft and fluffy, like cake! (Guess it should have been obvious.) I used a Pillsbury Devils Food mix. Granted, the texture of a box cake is only so-so, but it keeps it easy. Making the cake from scratch would probably be more delicious, but that’s just about always the case….
The fresh whipped cream to go on top was really good, so much better than Cool-Whip or Reddi-Whip will ever hope to be, and after trying it with both thawed frozen strawberries and fresh ones, I’d say definitely go for fresh if you can. Otherwise things can get a bit soggy.
My final review on this rather unusual baking technique is that while it is nothing fancy or gourmet, it is a lot of fun and doesn’t take long to do. Also the topping possibilities are endless …. ice cream, chocolate sauce, other kinds of cake mixes & fruit, etc ….. so it’s something I’ll keep in the back of my mind for informal get-togethers when I don’t have a lot of time but want to do something fun for dessert. :-)

Cake batter cooked in a waffle iron: have you ever heard of anything like it? If it works, I think it will be amazing. I’m going to try it tonight.
Basically you just make cake batter (or use a mix) — Brownie Points Blog specifies Devil’s Food — pour it on the waffle iron and cook as usual. Then you can top it however you want. I have some whipping cream I need to use up, and in the freezer I have some strawberries I picked myself last May which should make a great topping. It sounds like a nice Friday-night treat to me. :-)
I’ll let you know how it turns out ….. I have a back-up plan, too. I’ll make a couple of the waffles, and if it just isn’t working, I can bake the rest in the oven as usual & top with the cream and strawberries. I’m sure I’ll be able to convince my guests to eat it. ;-)
